1 cup Sugar
1 Tsp Pure Vanilla Essence.
Seperate Yolks from whites.
Beat whites until stiff, gradually add sugar and then Vanilla - keep beating until well blended and ready for the oven.
Place on a roasting dish with two layers of Baking paper.
Oven should be at 300° on at least for 8 minutes before Meringues go in.
Turn down to 250° ten minutes after commencing cooking.
Do not at any time open oven door.
Ready in approx. 3/4 hours.
Top with whipped cream. Absolutely never fail.
